Made by the exceptional Fromagerie Guilloteau, this crowd pleasing double cream can do no wrong. Similar to your brie in appearance and texture, but instead the milk undergoes a production Calle ultrafiltration before cheese-making. This method allows the cheese to ripen at a faster rate compared to Brie. It also gives the cheese a higher fat content, making it super creamy, buttery and oozy. It's one of our favourite cheeses for a reason...
Enjoy your D'affinois after it sits in room temperature for 30 mins. Then relish its creaminess with a side of the muscatel clusters. If you have fresh strawberries handy, or quince paste, these also compliment the cheese.
